Lonzino di Fico, also called lonza di fico, lonzetta di fico, or salame di fico, is a typical sweet from the Marche region, mainly produced in the province of Ancona.
It is a typical product from the Ancona area that can also be purchased in the municipality of Poggio San Marcello.
Lonzino di Fico is recognized as a traditional agri-food product from the Marche countryside, where figs—once grown in abundance—had become a real rarity. To safeguard and revitalize this traditional production, in 1999 Slow Food decided to establish a Presidio.
Characteristics
The lonzino di fico is cylindrical in shape, with a length between 15 and 20 centimeters and a diameter of about 6 cm. It is wrapped in fig leaves tied with string, just like a lonza. When sliced, the product reveals a brown-golden color with light pieces of nuts scattered throughout the paste. The flavor is pleasant and sweet, with a distinct taste of dried figs and a strong nutty aroma.
Method of Production
It is made by grinding together dotted figs or brogiotti figs (dried), with small pieces of walnuts, almonds, star anise seeds, and often also bits of cedar. Sometimes, sapa (a grape syrup) or mistrà (an anise-flavored liqueur) may be added. The mixture is then shaped until it takes on the form of a lonza and wrapped in fig leaves.
The lonzino di fico should be enjoyed at the end of a meal, sliced into thin pieces, or served with a well-aged cheese and paired with a passito wine (a sweet, dessert wine).
